The rules, briefly

You must be 18 or older and hold a valid Ontario G2 or G licence. Each day of the rental carries a young driver fee if a driver is under 26. The payment card and the licence must match the driver's name.

Third-party liability comes with every rate. For the car itself: your own policy with OPCF 27, a card that covers rentals, or the CarmaCars Protection Plan. There is a deposit for each rental, taken shortly before pickup rather than at booking. Every renter goes through the same check of licence and identity before the car is confirmed.
